340g soba noodles
50g toasted sesame seeds
30g fresh coriander, chopped
12g fresh chives, chopped
120g cucumber, diced
180g RAW Organic Fresh Sauerkraut - Ginger & Lemon
For the dressing:
3 Tablespoons toasted sesame oil
4 Tablespoons tamari
4 Tablespoons balsamic vinegar
3 Tablespoons any RAW Organic Honey or maple syrup
1. Cook soba noodles according to package instructions.
2. Drain and cool well. Place in a large bowl.
3. Combine dressing ingredients in a small bowl and whisk well to combine.
4. Four dressing over noodles and toss gently with sesame seeds, chives, cucumbers, and sauerkraut.
5. Can be served immediately, or chilled until ready to eat.
