Raw Raspberry Chia Fool

Serves 3-4

60 RAW Organic White Chia Seeds
300ml nut milk
100g raspberries, fresh or frozen and thawed
60g RAW Organic Cashew Butter
1 tsp. vanilla extract
2-3 tbsp. RAW Organic Maya Honey, or to taste

To serve:
Coconut yoghurt
Fresh raspberries

Combine the chia seeds and milk in a bowl. Whisk and leave for 15 minutes or until all of the liquid has been absorbed and they have formed a gel. You may need to whisk halfway through to avoid it becoming lumpy.

Place the chia gel into a high-speed blender with the rest of the ingredients and blend until completely smooth.

Refrigerate for at least an hour before serving, or overnight.

Serve with coconut yoghurt and fresh berries, or anything else you fancy.
