Raw Kale, Apple & Almond Salad

Serves 2

For the dressing:

60ml RAW Organic Greek Olive Oil
20ml RAW Organic Apple Cider Vinegar with Mother
1 clove garlic, minced (optional)
Salt and pepper, to taste

For the salad:

60-80g baby kale
1 apple, chopped roughly into small pieces
2 handfuls almonds, chopped roughly

Whisk all of the dressing ingredients together and taste for seasoning.

Toss the kale with the apple and then pour over as much of the dressing you would like (save any leftovers for later use).

Use your hands to massage the kale with the dressing for a minute or so. Taste and season if necessary.

Scatter over the almonds and serve.
