Easter Rainbow Salad

Serves 4

100ml RAW Apple Cider Vinegar With Honey
1 tbsp lemon juice
½ tsp kosher salt
60ml RAW Greek Extra Virgin Olive Oil
1 bag mixed lettuce leaves
3 tbsp pistachios, chopped
3 tbsp spring onions, sliced
2 watermelon radishes, peeled and thinly sliced
5 tbsp RAW Fresh Sauerkraut
1 mango, peeled and sliced
1 pack fresh strawberries, sliced

1. To make the dressing, whisk together the apple cider vinegar, lemon juice, and kosher salt. Gradually whisk in the olive oil and set aside.
2. To make the salad, arrange the mixed lettuce leaves on a large platter. Top with rows of pistachios, strawberries, spring onions, radishes, mango and sauerkraut.
3. Drizzle over the dressing and serve.
