30g rolled oats
1 medium Banana, mashed
80ml Almond milk unsweetened
1 ½ tsp Ground cinnamon
½ tsp Mixed spice
½ tsp Baking powder
½ medium Apple, grated
1 tsp Orange rind, finely grated
1 tsp RAW Organic Pure Blossom Honey
60g plain yoghurt
Small handful of fresh blueberries
1 tbsp RAW Organic Chia Seeds
1. Preheat the oven to 180°C (160°C fan-assisted).
2. Combine oats, half the banana, almond milk, 1 teaspoon cinnamon, mixed spice, baking powder and a pinch of salt in a large bowl. Add currants, half the apple and rind and stir until combined. Spread mixture into a 500ml capacity round shallow ovenproof dish. Bake in the oven for 30 minutes until golden and firm to the touch.
3. Meanwhile, heat a small frying pan over low heat. Combine remaining banana, remaining grated apple, remaining cinnamon and honey in a small bowl. Add to the pan and cook, stirring for 5 minutes or until the apple is soft and slightly caramelised.
4. Serve baked oats with apple mixture, spoon yogurt into a cross, blueberries and sprinkle chia seeds. Enjoy!
