Raw Lemon Curd

230g cashew nuts, soaked overnight
175g RAW Organic Acacia Flower Honey
100g RAW Organic Virgin Coconut Oil
1 ½ lemons, juice and zest
Pinch of salt

Drain the cashews from the water and put them into a high-speed blender with the rest of the ingredients. Blend until completely smooth.

Pour into jars and put in the fridge to thicken. Store in the fridge.

Use to top raw cakes, biscuits, coconut yoghurt and nicecream.
